If you're like me and have children that are constantly wanting something to chomp on then this simple flat bread recipe is ideal. Once made, you can fill with anything healthy or naughty or just tear up and dunk in some olive oil. My kids love making it too!
Basically it is Equal parts self raising flour and natural yoghurt - allow 50g per person:
Makes 4 - use plain flour if no SR
200g SR flour
Pinch sea salt
Extra spices (optional) - eg 1tsp Morocco’s spices or 1tsp cumin seeds
Use spoon to mix ingredients in a bowl.
When it starts to come together, use your hands to make it into a ball
Lightly flour the work surface and knead for 1 min (just enough to form a dough)
Heat a non stick frying pan on medium high heat
Cut dough into 4 pieces, roll into a ball and flatten with hand. Then use rolling pin to roll it into 3mm thick round
Dry fry each flat bread (or drizzle with a little olive oil first) for a minute on each side until golden brown - it’ll puff up into a ball, but will flatten again once cooled.
Top tip - warm them up again in a toaster for 10-20 seconds. You can freeze them too and toast from frozen.
